Peanut Butter Stir Fry
Sounds crazy doesn't it. Peanut butter stir fry? Ya I thought my friend was nuts when she told me about this. Her boyfriend's mother's friend's sister (or something like that haha) told her about this recipe. Well if her boyfriend's mother's friend's sister said it was good, it MUST be worth a try.
And they were right.
What I love about this recipe is that makes my usually boring stir fry a little more interesting with ingredients that I always have kicking around the house. And when I heat it up in the microwave in the student lounge at school, I tend to get some head turns. Puts the turkey sandwich to shame.
So this recipe is all about the sauce. Feel free to use whatever ingredients you want for your stir fry. For this case, I used chunks of left over pork tenderloin, broccoli and mushrooms.
Peanut Butter Stir Fry
Time: 2 mins (+ stir fry time) CPS: $0.55 L of D: Undergraduate
- 1/4 Cup Catalina Dressing
- 3 Tbsp Soy Sauce
- 3 Tbsp Peanut Butter (smooth or crunchy)
In a bowl, mix together all ingredients. I usually saute garlic with the stir fry ingredients and in my opinion it is an important part of the flavours of the dish. I also don't add salt until the very end because the sauce is already quite saucy.
Once your stir fry ingredients are nearly cooked through (veggies are still a bit crunchy), add your sauce to the pan and let everyone mingle together a bit.
If you prefer a bit runnier of a sauce, add a wee bit of water.
And to add a little fun, sprinkle a little chopped peanuts on top before you serve!
