Oatmeal Orange Crusted French Toast with a Citrus Yogurt Glaze

Oatmeal for breakfast. It is so boring. I eat it like everyday in the winter. Sometimes for lunch too. I am certainly over it.

K Not really. I love you oatmeal, I am sorry to speak so poorly of you! I will make it up to you by making you into something delicious and different. You will no longer be boring.

Oatmeal. Taking over Sunday breakfast one Sunday at a time.

Oatmeal Orange Crusted French Toast with a Citrus Yogurt Glaze
Time: 15 mins.                   CPS: $1.25                       L of D: Undergraduate

- 2 Pieces of your fave bread
- 2 Eggs
- Zest of 1 orange
- Juice of 1/2 orange
- Splash of milk
- 1/2 cup of oatmeal
- 1 Tsp of sugar

Citrus Yogurt Glaze
- 1 Tbsp of Plain Yogurt
- 1 Tbsp of Citrus or Orange Marmalade

Make glaze by mixing yogurt and marmalade together.

Mix eggs, milk, sugar, orange zest and juice together in a shallow dish. In another shallow dish, spread out oatmeal.

Heat up frying pan to medium-high heat and spray with cooking spray (or butter yum).

Dip bread in egg mixture until coated, then dip into oatmeal to form a crust.

Place in hot frying pan and cook until golden brown on each side, approximately 5-8 minutes.

Drizzle with glaze and give your oatmeal bag a big hug.

  2. This is a really clever recipe! I would never have thought of crusting french toast, let alone with oatmeal, bravo! I saw your blog on foodieblogroll.com, and it is so nice to find another cooking college student like me :)
