Chocolate Buttercream Icing


Okay. A personal confession, I think cake from a box... is amazing. I hate to admit that anything from a box is amazing. Except for mac and cheese of course. But honestly, it's hard to compete with. Box cake is usually super moist and delicious and it is super duper easy to make not to mention cheap as hell.

So yes, I sometimes make cake from a box. But that isn't gourmet! But what is gourmet is sprucing it up with some homemade icing. That's right, you can do something fancy and call it your own.

And comeon.. anything with the word "butter" in the title has to be friggan fantastic.


These are some birthday cupcakes I made to bring to school! For some reason, there was like 20 thousand people in my class that had a birthday in January. So I wanted to celebrate!!

Chocolate Buttercream Icing
Time: 10 mins.            CPS: For a batch of 24 cupcakes $3.09       L of D: Undergraduate

  • 1 cup of Butter
  • 1/4 cup of Cocoa powder
  • 1/2 cup of melted Chocolate (the darker the chocolate, the darker the colour)
  • 1 tsp of Vanilla Extract
  • About 3 1/2 cups of Icing Sugar
  • Couple splashes of milk

Start by melting your chocolate either in a microwave or over a double boiler. Once melted, set aside to let cool a little so you don't melt the butter when you put it in. Also sift your icing sugar before you start, this will make for a smoother icing.

In a bowl (or a stand mixer) start mixing the butter. Add vanilla. Add melted chocolate once it has cooled down a bit and mix together.

Slowly, in small batches (to prevent icing sugar from taking over your kitchen), add icing sugar and cocoa powder. Once incorporated, if the icing seems too stiff and dry, add a splash of milk.

Give it a taste, if it taste too butter for your liking (if that is even possible) add more icing sugar a little at a time, and you may need to add a splash of milk as well. Just make sure it taste good =)

Spread right away if you like, or if you are putting it in the fridge for later, remember to allow it to come to room temp before you try to ice your cake. Because it will be hard.. like budda .

2 girls in my class couldn't have gluten or dairy, so I decorated bananas instead HA

  2. I love things that come in boxes: jewelry, mac n' cheese (as you said above, and I was actually planning on making that for dinner tonight as it turns out!), and yes, cake mixes. Nothing wrong with a little short-cut, especially when you bedazzle the cake as you've done haha. I love those little blue flowers!

  3. What a great site...may I send you some of my food pix. Gotta know you are a foodie when you have food pix on your i phone..my secret. This year we will get those herbs growing like weeds on your balcony...I would be glad to bring you an assortment this spring from Niagara. Nothing gives me more pleasure than going to my outdoor spice rack during the summer. Food is Love.
