Egg and Sausage Breakfast Pizza

Whoa nelly! It is pizza for breakfast again.

You know what the best part of this pizza was? The fact that when I made this I am pretty sure I was drinking a ceasar as a hangover cure... and then I spilt it on the pizza (post picture of course - or probably while I was drinking to juggle a camera and a drink is one hand). And I ate it anyways (clearly I did... I was hungover)


While I devoured it down, I contemplated other types of hangover booze would be a delicious accident. I think beer would be okay as well... probably not my friend and lover Jack Daniels, I probably had enough of him the night before.

How the heck do you eat this, you must ask. Well you just do okay, just DO IT.

Anyways, here is the recipe MINUS the ceasar! I am sure it really is better without the booze.


Egg and Sausage Breakfast Pizza

Time: 30 mins.             CPS: $1.95 per pizza            L of D: Graduate

- Pizza Dough ( a big handful is enough for one pizza)
- 2 Sausages (breakfast links rock - others are fine)
- 2 eggs
- 1/4 cup of pizza sauce
- Handful of spinach
- 2 Tbsp of parm cheese
- Chili pepper flakes (optional)
- 1 Tbsp of cornmeal (optional)
- Salt n Pepa

Preheat oven to 450 degrees. Cut down length of sausage and scrape meat out of casing. I will have the consistency of ground beef. Toss this in a frying pan until cooked through - approximately 5-7 minutes. Drain off excess fat by laying on paper towel, and let cool for a few mins.

In the meantime, sprinkle cornmeal on a baking sheet. Roll out the pizza dough to desired shape and place over cornmeal on baking sheet. Spread pizza sauce all over, leave an edge for the crust. Sprinkle over pepper flakes if desired.  Arrange the sausage around the perimeter of the dough. Like in the picture above (trust me, this prevents the eggs from running all over the place).

Place in oven for approximately 8-10 minutes.

Take out of oven and use the back of a spoon to make an indentation where the eggs are going to go. Carefully crack an egg into each spot. Place back into oven carefully, for another 5-7 minutes or until the egg whites are set but the yolk is still runny. Want a harder yolk? Leave it in for longer.

Top with a handful of baby spinach, sprinkle with parm cheese and salt n pepa and serve!

Oh and don't forget to spill your drink all over it for that extra kick ;)
