Kale Chips

Sweet tooth? How about a SALT tooth? Ya that is more like it. Icecream? No thanks. Cookies? Maybe later. Crackers? Oh ya. Popcorn? Oooh baby. Chips? YES!!! Salty foods are a weak spot for me and when I get my hands on something, there is no stopping me. But obviously eating bags and bags of chips is clearly NOT healthy in any way shape or form. And I have stressed this point before because I know there are more like me out there! Don’t worry peeps! I feel your pain!

So what the heck to do about this? Answer: Kale Chips. Now I have been making these for some time now, but I am starting to see a trend with them. Apparently they are becoming more popular. And they should be! They rock!

I first found this idea from Dani Spies's Kale Chips. I actually have no idea how I stumbled upon it. I don’t think I have ever had kale in my life before this either. Weird. Any hoo, I gave it a try and was not disappointed.

But I am going to be completely honest. I hated these at first bite. As well as the second bite. I really didn't like them at first. So I am not sure why I even made them again, but thank goodness I did because with each batch my love grew stronger. I guess for me, it was an acquired taste and perhaps for you too. So give it a try, and maybe another try after that...and another.

Kale Chips
Time: 20 mins         CPS: $0.75 (4 servings per bundle)            L of D: Undergraduate

- 1 Bundle of Kale
- 1 tbsp of Olive Oil
- 1 Tbsp of Salt

Preheat oven to 450 degrees. Wash and dry kale thoroughly. Strip the leaves off the stem and tear into smaller chunks. I know this will seems like a lot of kale, but once baked, they shrink down significantly.

In a large bowl, pour over olive oil and massage (yes massage) oil into the leaves. Trust me this amount of oil goes a LONG way. Sprinkle with salt and mix around.

Now to the most important step. Spread out the kale on a baking sheet in one even layer but make sure that each piece is not touching another. If they are they will steam and therefore will not be crunchy. Therefore you will have to do this in batches. Kinda annoying but worth it.

Put in oven for approximately 10 minutes or until leaves start to turn a bit brown and become crispy. But I recommend keeping a close eye on these bad boys. Also do some taste testing along the way. I found that I preferred my kale chips to not be completely crunchy and have some soft middles - that is a preference only. So just keep watch.

Let cool - but only till you can handle them, I prefer to eat them warm! Also - the bf enjoys dipping these in hot sauce - but he is a weirdo.
