Baked Tomato with Egg, Bacon and Cheese

Breakfast can be fun no? Especially when you do fancy things on a dime. Like bake an egg in a tomato. Madness I know!!!
I saw this recipe on one of my favourite blogs Poor Girl Eats Well. I like her philosophy. It says it all in the title.

I put my own little spin on her recipe. But I do wish I thought it up. I think it is kick-ass. But of course, like usual, I told my man I made it up to impress him. But I don't think he cared that much who thought it up because he ate it in 2 bites and asked for another. I guess it was a success right?



Baked Tomato with Egg, Bacon and Cheese
Adapted from Poor Girl Eats Well
Time: 30 mins.                 CPS: $1.55                               L of D: Undergraduate

  • 1 Tomato
  • 1 Egg
  • 1 Tbsp of Bacon Bits or 1 strip of bacon cooked and diced up
  • 1 Tbsp of shredded cheese (I used mozzarella)
  • Salt n Pepa

Preheat oven to 450 degrees.
Carefully, and I cannot stress the word carefully enough..cut a whole in the tomato and scoop out the guts (save the flesh and seeds for later, you can make salsa or use it in pasta sauce... yeeeaaa buddy).  Be careful not to puncture the sides or the bottom, because yes you guessed it, everything will flow out.
Place the tomato on a lightly oiled baking sheet/dish and build from here. It is hard to move these once they are full!

Drop in the bacon, and crack an egg into the tomato. Place in the oven for about 15 minutes. Maybe longer if you want the yolk cooked more. Pull out, sprinkle the cheese on top and put it back in for another 5 minutes.

Take it out and crack some pepper on it, taste it and then decide if you need salt. Bacon can be a salty mo-fo.

Serve with some bread for dippin!
